Mother's Day Treat: Baked Brie with Dandelion Marmelade and toasted Black Walnuts



I recently ran across a recipe for baked brie in one of my mother's magazines that I decided to try with some of our wild foods in place of other ingredients. Since brie is expensive, we tried it out on a mini wheel first and were blown away.

So, for Mother's Day, I made a big one for my mother (and all the other family members gathered at her house). It was easy and delicious. I took a bowlful of the dandelion marmelade I made last spring and mixed it with a small amount of honey to make it easily spreadable. I covered the brie with a thick layer of marmelade. Then I covered the top with toasted black walnuts. I baked the brie for 25 minutes until it was nice and melty and served it with toasted slices of French baguette. So yummy!   1. I just wanted to tell both of you that I love this site. I think you're doing a very admirable thing, and this site is a great resource. I don't think I'm going to be digging up my dock plants to eat the roots anytime soon (only because I also have a HUGE garden that requires most of my time), but it's good to know I could if I needed to.
