Lamb's Quarters Pie


1 pie crust, store bought or homemade

6 to 8 cups fresh lamb's quarters

3 eggs

1 cup ricotta cheese

1/2 to 1 cup shredded cheddar or mozzarella cheese



1) Preheat oven to 375

2) Rinse, chop, and steam (or lightly boil) lamb's quarters

3) Beat eggs in large bowl

4) Mix ricotta, cheese, and lamb's quarters into eggs.

5) Add salt and pepper to taste.

6) Pour lamb's quarters mixture into pie crust

7) Bake for 40 minutes.
