- Be afraid. It's good to take your time keying out things in the carrot family and watching them for a long time before trying them. It's great way to not end up dead.
- Wash well. A good nail brush is a must for these twisty roots. We spent extra time scrubbing and were happy for it.
- Gather more. For a root vegetable these cooked down a lot.

Parsnip Part II--Still Not Dead (Pastinaca sativa)
Wild parsnips and domesticated potato fried in butter--what better side dish could you ask for? The parsnips were awesome. Here's our advice on parsnips.
